Called in the other day on my way to Victoria, bought a slab of pork belly and some thick chuck steaks all destined for the smoker. I got there near closing time and the butcher was more than accommodating and helpful to get what I asked for out of the fridge and slice it up. I got my chance today to smoke some it and the quality and flavour is sensational.
I would happily detour to go back to this butcher my only thing is I will need a bigger Esky
